Ingredients

  • 2 cups fresh peaches, diced
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. Combine the flour, oats, granulated sugar, brown sugar, cinnamon, and salt in a mixing bowl.
  3. Cut in the softened butter until the mixture looks like coarse crumbs.
  4. Press half of this crumb mixture into the bottom of the prepared baking dish to create the base.
  5. Toss the diced peaches with lemon juice, then spread them evenly over the crust.
  6. Top the peach layer with the remaining crumb mixture.
  7. Bake for 30-35 minutes, or until the top turns a luscious golden brown.
  8. Mix powdered sugar with milk to create the glaze, and drizzle it over the bars before serving.
