- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 can (15 oz) sliced peaches, drained
- 1 teaspoon cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 325°F (160°C).
- Mix the graham cracker crumbs and melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan.
- Beat the softened cream cheese with sugar and vanilla until smooth and creamy in a large mixing bowl.
- Beat in the eggs one by one, ensuring each is fully mixed before adding the next. Pour this smooth cheesecake mixture over your crust.
- Combine the sliced peaches with cinnamon and brown sugar, mixing until well coated. Spoon the peach mixture evenly over the cheesecake layer.
- Bake for 55-60 minutes, or until the center is set and only slightly jiggly.
- Let it cool before refrigerating for at least 4 hours (overnight is even better!) before serving.
Notes
For a smooth cheesecake filling, ensure cream cheese is at room temperature before mixing. Mixing slowly after adding eggs helps prevent air bubbles.
