Description

A delightful combination of peach cobbler and cheesecake, perfect for summer gatherings and special occasions.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 can (15 oz) sliced peaches, drained
  • 1 teaspoon cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the graham cracker crumbs and melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan.
  3. Beat the softened cream cheese with sugar and vanilla until smooth and creamy in a large mixing bowl.
  4. Beat in the eggs one by one, ensuring each is fully mixed before adding the next. Pour this smooth cheesecake mixture over your crust.
  5. Combine the sliced peaches with cinnamon and brown sugar, mixing until well coated. Spoon the peach mixture evenly over the cheesecake layer.
  6. Bake for 55-60 minutes, or until the center is set and only slightly jiggly.
  7. Let it cool before refrigerating for at least 4 hours (overnight is even better!) before serving.

Notes

For a smooth cheesecake filling, ensure cream cheese is at room temperature before mixing. Mixing slowly after adding eggs helps prevent air bubbles.
