- 2 pounds carrots, cut diagonally into 3-inch pieces
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- Melt the butter in a small saucepan over medium heat, then add the minced garlic and sauté for 1-2 minutes until fragrant.
- Place the carrots on a large baking sheet and drizzle them with the garlic butter. Sprinkle with Italian seasoning, salt, and pepper, tossing to coat.
- Roast in the oven for 20-25 minutes, stirring halfway through until tender and lightly browned.
- Remove from the oven and sprinkle with grated Parmesan cheese. Return to the oven for an additional 3-5 minutes until the cheese is melted and golden.
- Garnish with fresh parsley before serving.
Notes
These carrots pair well with grilled meats and can be customized with different herbs or even infused with honey for sweetness.
