Description

A simple and delicious side dish featuring tender roasted carrots enhanced with garlic and Parmesan cheese.


Ingredients

  • 2 pounds carrots, cut diagonally into 3-inch pieces
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt the butter in a small saucepan over medium heat, then add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Place the carrots on a large baking sheet and drizzle them with the garlic butter. Sprinkle with Italian seasoning, salt, and pepper, tossing to coat.
  4. Roast in the oven for 20-25 minutes, stirring halfway through until tender and lightly browned.
  5. Remove from the oven and sprinkle with grated Parmesan cheese. Return to the oven for an additional 3-5 minutes until the cheese is melted and golden.
  6. Garnish with fresh parsley before serving.

Notes
