- ½ cup unsalted butter, melted
- ¾ cup raw honey
- 2 large eggs
- 1 cup fresh orange juice
- Zest from 2 oranges
- 1 tbsp grated fresh ginger
- 2 tbsp honey (optional glaze)
- 2 tbsp orange juice (optional glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease your baking pan.
- Whisk together the all-purpose flour, baking soda, ground ginger, cinnamon, nutmeg, and salt in a large bowl.
- Mix the melted unsalted butter with raw honey and eggs in a separate bowl until well combined.
- Stir in the fresh orange juice, orange zest, and grated ginger until everything is nicely blended.
- Fold the dry ingredients into the wet mixture gently, mixing just until combined to avoid a dense cake.
- Pour the batter into your prepared baking pan and smooth the top.
- Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
- Brush the optional glaze over the cake while it’s warm if using.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a gluten-free option, substitute all-purpose flour with a gluten-free blend. For a vegan version, use coconut oil instead of butter and a flax or chia egg in place of the eggs.
