Description

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • A pinch of salt
  • ½ cup unsalted butter, melted
  • ¾ cup raw honey
  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest from 2 oranges
  • 1 tbsp grated fresh ginger
  • 2 tbsp honey (optional glaze)
  • 2 tbsp orange juice (optional glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking pan.
  2. Whisk together the all-purpose flour, baking soda, ground ginger, cinnamon, nutmeg, and salt in a large bowl.
  3. Mix the melted unsalted butter with raw honey and eggs in a separate bowl until well combined.
  4. Stir in the fresh orange juice, orange zest, and grated ginger until everything is nicely blended.
  5. Fold the dry ingredients into the wet mixture gently, mixing just until combined to avoid a dense cake.
  6. Pour the batter into your prepared baking pan and smooth the top.
  7. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Brush the optional glaze over the cake while it’s warm if using.
  9. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free blend. For a vegan version, use coconut oil instead of butter and a flax or chia egg in place of the eggs.
