Description

Ingredients

  • 1/2 cup heavy cream
  • 1 cup dark chocolate, chopped
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat your oven to 300°F (150°C). Prepare your baking sheets by lining them with parchment paper.
  2. Mix the dry ingredients: In a bowl, combine the powdered sugar and almond flour. Sift together to ensure a fine texture.
  3. Whisk the egg whites: Using a clean, grease-free bowl, whisk the egg whites until soft peaks form. Gradually add the granulated sugar while continuing to whisk until you achieve stiff peaks.
  4. Combine the mixtures: Gently fold in the almond and powdered sugar mixture. Add the orange zest and food coloring to achieve a beautiful, vibrant hue.
  5. Pipe the batter: Transfer the macaron batter into a piping bag. Pipe rounds onto the prepared baking sheets, allowing space between each one. Let the piped macarons sit for about 30 minutes to form a skin.
  6. Bake: Place the trays in the preheated oven and bake for 15-20 minutes. They should be firm to the touch. Allow the macarons to cool completely on the baking sheets.
  7. Prepare the ganache: In a saucepan, heat the heavy cream until it simmers. Pour it over the chopped dark chocolate and let it sit for a minute. Stir until smooth, then add the butter for added richness.
  8. Assembly: Once the macarons are cool, pipe a generous amount of chocolate ganache on the flat side of one shell and top it with another. Press gently to seal. Repeat until all shells are paired. Enjoy!
