Description

- 2 cups cooked rice
- 2 eggs
- 1/2 cup cooked and diced chicken
- 1/4 cup chopped onion
- 1/4 cup ketchup
- Salt and pepper to taste
- 2 tablespoons vegetable or olive oil
Instructions
- Heat the oil in a pan over medium heat. Once hot, add the chopped onion and sauté until translucent — about 2-3 minutes.
- Stir in the diced chicken and cooked rice, mixing well. Cook for another 2-3 minutes until heated through.
- Add the ketchup, and season with salt and pepper. Stir to combine and let it cook for a couple more minutes.
- Beat the eggs in a separate bowl until well mixed. Pour them into a non-stick pan over low heat, swirling to create a round shape. Cook until just set but still soft.
- Plate your fried rice by spooning it onto a plate and placing the omelette on top, folding it over if desired.
- Serve hot, with an extra drizzle of ketchup.
Notes
Use day-old rice to prevent mushiness and whisk eggs until frothy for a fluffier omelette.
