Description

Omelette rice, a comforting Japanese dish, features fluffy seasoned rice and tender chicken enveloped in a silky omelette, perfect for any occasion.


Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 1/2 cup cooked and diced chicken
  • 1/4 cup chopped onion
  • 1/4 cup ketchup
  • Salt and pepper to taste
  • 2 tablespoons vegetable or olive oil

Instructions

  1. Heat the oil in a pan over medium heat. Once hot, add the chopped onion and sauté until translucent — about 2-3 minutes.
  2. Stir in the diced chicken and cooked rice, mixing well. Cook for another 2-3 minutes until heated through.
  3. Add the ketchup, and season with salt and pepper. Stir to combine and let it cook for a couple more minutes.
  4. Beat the eggs in a separate bowl until well mixed. Pour them into a non-stick pan over low heat, swirling to create a round shape. Cook until just set but still soft.
  5. Plate your fried rice by spooning it onto a plate and placing the omelette on top, folding it over if desired.
  6. Serve hot, with an extra drizzle of ketchup.

Notes

Use day-old rice to prevent mushiness and whisk eggs until frothy for a fluffier omelette.
