A refreshing no-bake cheesecake infused with vibrant flavors of fresh orange and pineapple, perfect for summer days.

- 1 ½ cups graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 2 tbsp sugar (for crust)
- 16 oz cream cheese, softened
- ½ cup sugar (for filling)
- 1 cup heavy whipping cream
- 2 tsp vanilla extract
- ¾ cup fresh pineapple chunks
- ½ cup fresh orange juice
- 2 tbsp sugar (for puree)
Instructions
- Make the crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and 2 tablespoons of sugar until combined. Press the mixture into the bottom of a springform pan, forming an even layer. Chill in the refrigerator while you prepare the filling.
- Prepare the filling: In a large mixing bowl, beat the softened cream cheese with ½ cup of sugar until smooth.
- Whip the cream: In another bowl, whip the heavy cream with the vanilla extract until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Add the fruits: In a blender, combine the fresh pineapple chunks, orange juice, and 2 tablespoons of sugar. Blend until smooth. Gently swirl the fruit puree into the cheesecake filling, being careful not to mix it too much.
- Combine layers: Pour the cheesecake filling over the crust and smooth the top. Cover with plastic wrap, and let it chill in the fridge for at least 240 minutes, or until firm.
Notes
Serve topped with extra pineapple chunks or a drizzle of orange syrup, and garnish with mint leaves for an added touch.
