Description

A crowd-pleasing lasagna filled with hearty mushrooms, vibrant spinach, and layered with rich cheeses and marinara.


Ingredients

  • Lasagna noodles
  • Sliced mushrooms
  • Fresh spinach
  • Ricotta cheese
  • Shredded mozzarella cheese
  • Marinara sauce
  • Olive oil
  • Minced garlic
  • Salt
  • Black pepper
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant. Toss in sliced mushrooms and cook until tender. Finally, add fresh spinach and stir until wilted. Season with salt and black pepper.
  3. Layer the baking dish starting with marinara sauce, followed by lasagna noodles, mushroom and spinach mixture, ricotta cheese, and shredded mozzarella. Repeat layers ending with noodles, marinara, and mozzarella.
  4. Bake covered with foil for 25 minutes, then remove foil and bake for an additional 15 minutes until cheese is golden and bubbly.
  5. Cool for a few moments before slicing and serving.

Notes

Let the lasagna sit for a few minutes after baking for easier slicing. Add a pinch of nutmeg to the ricotta for extra flavor.
