- 1 lb chicken breast, sliced thin
- 2 cups mushrooms, sliced
- 1 cup broccoli florets
- 1 cup snow peas
- 1 carrot, sliced
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Mix the sliced chicken in a bowl with cornstarch, soy sauce, and a pinch of salt. Let marinate for about 15 minutes.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
- Introduce the marinated chicken to the skillet and stir-fry until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- Toss in the vegetables—mushrooms, broccoli, snow peas, and carrots—and stir-fry for about 3-4 minutes until tender-crisp.
- Return the cooked chicken to the skillet, adding oyster sauce and sesame oil. Toss together and cook for another 2 minutes.
- Adjust seasoning with salt and pepper, and serve hot over rice.
Notes
Serve with steamed rice and garnish with sesame seeds or green onions. Store leftovers in an airtight container for up to 3 days.
