Description

A comforting and indulgent dish combining the nostalgia of French onion soup with the delightful texture of gnocchi, perfect for chilly evenings or casual gatherings.

Ingredients

Scale
  • 1 pound gnocchi
  • 2 large onions, sliced thinly
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 cups beef or vegetable broth
  • 1 teaspoon fresh thyme (or dried)
  • Salt and pepper to taste
  • 1 cup shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the butter and olive oil over medium heat in a large skillet.
  3. Add the sliced onions and cook, stirring frequently, until they’re caramelized, about 20-25 minutes.
  4. Once the onions are golden brown, stir in the broth and thyme, then season with salt and pepper.
  5. Allow the mixture to simmer for a few minutes to meld the flavors.
  6. Add the gnocchi to the skillet, gently stirring to ensure they’re coated with the onion mixture.
  7. Transfer the gnocchi mixture into a baking dish and top with the Gruyère and Parmesan cheeses.
  8. Bake for 15-20 minutes, or until the cheese is bubbly and golden brown.
  9. Garnish with fresh parsley before serving.

Notes

Consider adding sautéed mushrooms or spinach for extra flavor, and feel free to swap the cheeses based on what you have on hand.
