Instructions
- Preheat your oven to 400°F (200°C).
- Heat the butter and olive oil over medium heat in a large skillet.
- Add the sliced onions and cook, stirring frequently, until they’re caramelized, about 20-25 minutes.
- Once the onions are golden brown, stir in the broth and thyme, then season with salt and pepper.
- Allow the mixture to simmer for a few minutes to meld the flavors.
- Add the gnocchi to the skillet, gently stirring to ensure they’re coated with the onion mixture.
- Transfer the gnocchi mixture into a baking dish and top with the Gruyère and Parmesan cheeses.
- Bake for 15-20 minutes, or until the cheese is bubbly and golden brown.
- Garnish with fresh parsley before serving.
