Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the pumpkin puree, softened cream cheese, sugar, vanilla extract, and pumpkin pie spice until smooth.
- Roll out the pie crust and cut it into circles for mini pie tins.
- Press the crust into the tins and fill with the pumpkin mixture.
- Combine the sugar and cinnamon, then sprinkle on top of each pie.
- Bake for 20-25 minutes, or until the filling is set.
