Description

These warm, flaky meat pies filled with savory ground meat and vibrant vegetables are perfect for gatherings or weeknight dinners.


Ingredients

  • 3 cups all-purpose flour
  • 1 tbsp instant yeast
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 1 cup warm water (more as needed)
  • 1 lb ground beef or lamb
  • 1 small onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1/4 cup red bell pepper, finely chopped
  • 2 tbsp pine nuts
  • 1 tbsp pomegranate molasses
  • 1 tsp ground allspice
  • 1/2 tsp cinnamon
  • Salt and black pepper to taste
  • 1 tbsp olive oil (for cooking)

Instructions

  1. Prepare the dough: In a large bowl, mix the flour, instant yeast, sugar, and salt. Slowly add the olive oil and warm water while combining the mixture until you have a soft dough.
  2. Knead the dough: Knead the dough for 8–10 minutes until smooth. Cover it with a cloth and let it rise in a warm place for about 60 minutes or until it doubles in size.
  3. Cook the filling: In a skillet, heat the olive oil over medium heat. Sauté the chopped onions until they soften, then add the ground meat. Cook until browned.
  4. Add vegetables: Stir in the tomato, red bell pepper, and pine nuts, cooking for about 5 minutes. Add allspice, cinnamon, and salt and pepper to taste, followed by the pomegranate molasses. Remove from heat and allow the mixture to cool.
  5. Prepare for baking: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  6. Shape the pies: Divide the risen dough into small balls and roll each into a 5–6 inch oval. Place them on the prepared baking sheet.
  7. Fill and bake: Spread about 2 tablespoons of the cooled meat mixture onto each dough oval, leaving a slight border. Bake for 12–15 minutes or until the dough is golden and cooked through.
  8. Serve: Enjoy these warm, perhaps alongside yogurt or lemon wedges for an extra zest!
