Ingredients
- Brussels Sprouts
- Cotija Cheese
- Chili Powder
- Lime Juice
- Crema
- Olive Oil

Instructions
- Preheat your oven to 400°F (200°C).
- Trim the ends of the Brussels sprouts and slice them in half. Toss with olive oil, salt, and pepper to coat evenly.
- Spread the Brussels sprouts in a single layer on a baking sheet for even roasting.
- Roast for 20-25 minutes, until they are golden brown and crispy.
- While they roast, whisk together crema, lime juice, and chili powder in a small bowl.
- Once the sprouts are beautifully roasted, take them out of the oven and drizzle with the crema mixture.
- Finally, sprinkle Cotija cheese generously on top and serve immediately.
Notes
For extra crunch, consider adding toasted corn kernels on top before serving. If you’re short on time, prepare the Brussels sprouts ahead of time and store them unroasted.
