Ingredients

- 1 cup long-grain white rice
- 2 cups water or vegetable broth
- 1 teaspoon turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup roasted pine nuts
- 1/4 cup fresh parsley, chopped
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
Instructions
- Heat the olive oil in a medium saucepan over medium heat.
- Sauté the chopped onion and garlic until soft and fragrant, about 3-5 minutes.
- Stir in the long-grain rice and cook for an additional 2-3 minutes until lightly toasted.
- Pour in the water (or broth) and stir in the turmeric, salt, and black pepper. Bring to a boil.
- Reduce the heat to low, cover the saucepan, and let it simmer for 18-20 minutes, until the rice is tender and the liquid has been absorbed.
- Fluff the rice with a fork, then gently mix in the roasted pine nuts and chopped parsley before serving.
Notes
For a healthier option, use brown rice instead of white rice. You can also substitute pine nuts with slivered almonds.
