- 1 sheet of puff pastry
- 2 cups mixed Mediterranean vegetables (zucchini, bell peppers, eggplant, cherry tomatoes)
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup feta cheese, crumbled
- 1 egg, beaten (for the egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- Lightly flour your workspace and roll out the puff pastry to fit your baking sheet.
- Combine the mixed vegetables with olive oil, oregano, salt, and black pepper in a mixing bowl.
- Spread the vegetable mixture in the center of the pastry, allowing a generous border around the edges.
- Evenly sprinkle the crumbled feta cheese over the top of the vegetables.
- Fold the edges of the pastry over the filling, pinching and pleating as necessary for a rustic look.
- Brush the edges with the beaten egg to give it that golden finish.
- Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
- Allow to cool slightly before serving, then slice and enjoy!
Notes
Use cold ingredients for a better puff pastry. Feel free to substitute different cheeses or vegetables based on your preferences.
