Description

A charming dish that brings the vibrant flavors of Mediterranean vegetables into a beautifully flaky crust, perfect for any occasion.


Ingredients

  • 1 sheet of puff pastry
  • 2 cups mixed Mediterranean vegetables (zucchini, bell peppers, eggplant, cherry tomatoes)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup feta cheese, crumbled
  • 1 egg, beaten (for the egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly flour your workspace and roll out the puff pastry to fit your baking sheet.
  3. Combine the mixed vegetables with olive oil, oregano, salt, and black pepper in a mixing bowl.
  4. Spread the vegetable mixture in the center of the pastry, allowing a generous border around the edges.
  5. Evenly sprinkle the crumbled feta cheese over the top of the vegetables.
  6. Fold the edges of the pastry over the filling, pinching and pleating as necessary for a rustic look.
  7. Brush the edges with the beaten egg to give it that golden finish.
  8. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
  9. Allow to cool slightly before serving, then slice and enjoy!

Notes

Use cold ingredients for a better puff pastry. Feel free to substitute different cheeses or vegetables based on your preferences.
