- 1 lb chicken breast, sliced
- 2 cups mixed bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pan over medium heat.
- Add the sliced chicken breast and cook until nicely browned and cooked through, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the sliced bell peppers, zucchini, and halved cherry tomatoes.
- Sprinkle with oregano, basil, salt, and pepper, stirring well to combine.
- Continue cooking for another 5-7 minutes, or until the vegetables are tender yet vibrant.
- Serve hot, garnished with fresh parsley.
