- 4 large eggs
- 200g feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the halved cherry tomatoes and Kalamata olives in an oven-safe baking dish. Crumble the feta cheese evenly over the top.
- Season the mixture with olive oil, dried oregano, red pepper flakes (if using), and salt and pepper to taste.
- Bake for about 15 minutes, or until the feta is softened and the tomatoes are blistered.
- Add wells in the mixture and crack an egg into each well.
- Return the dish to the oven and bake for an additional 5-7 minutes, until the egg whites are set but yolks remain runny.
- Garnish with fresh basil or parsley before serving.
Notes
Use good-quality feta cheese for the best flavor. If you prefer softer yolks, watch the eggs closely during the final bake.
