Description

A delicious twist on breakfast featuring baked feta cheese, cherry tomatoes, and olives, perfect for any meal.


Ingredients

  • 4 large eggs
  • 200g feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the halved cherry tomatoes and Kalamata olives in an oven-safe baking dish. Crumble the feta cheese evenly over the top.
  3. Season the mixture with olive oil, dried oregano, red pepper flakes (if using), and salt and pepper to taste.
  4. Bake for about 15 minutes, or until the feta is softened and the tomatoes are blistered.
  5. Add wells in the mixture and crack an egg into each well.
  6. Return the dish to the oven and bake for an additional 5-7 minutes, until the egg whites are set but yolks remain runny.
  7. Garnish with fresh basil or parsley before serving.

Notes

Use good-quality feta cheese for the best flavor. If you prefer softer yolks, watch the eggs closely during the final bake.
