- 1 pinch salt
- 1 cup semi-sweet chocolate chips
- ½ cup unsalted butter, room temperature
- ½ cup light brown sugar
- ½ cup granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (optional)
- A few drops pink gel food coloring
- 1 cup maraschino cherries, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Combine the flour, cornstarch, baking soda, and salt in a bowl. Set aside.
- Beat the softened butter, light brown sugar, and granulated sugar until creamy.
- Add the egg and mix in the vanilla extract and almond extract (if using).
- Incorporate the dry ingredients into the wet mixture, mixing just until combined.
- Fold in the chopped maraschino cherries and chocolate chips (and food coloring, if using).
- Scoop tablespoons of dough onto the prepared baking sheets, spacing them a couple of inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
For added texture, consider folding in chopped nuts or coconut flakes.
