Description

These delightful cookies are a sweet celebration of flavors and colors, featuring juicy maraschino cherries and melting chocolate chips.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup semi-sweet chocolate chips
  • ½ cup unsalted butter, room temperature
  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • A few drops pink gel food coloring
  • 1 cup maraschino cherries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Combine the flour, cornstarch, baking soda, and salt in a bowl. Set aside.
  3. Beat the softened butter, light brown sugar, and granulated sugar until creamy.
  4. Add the egg and mix in the vanilla extract and almond extract (if using).
  5. Incorporate the dry ingredients into the wet mixture, mixing just until combined.
  6. Fold in the chopped maraschino cherries and chocolate chips (and food coloring, if using).
  7. Scoop tablespoons of dough onto the prepared baking sheets, spacing them a couple of inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For added texture, consider folding in chopped nuts or coconut flakes.
