- 1/2 cup unsalted butter, softened
- 1 cup white granulated sugar
- 1 teaspoon pure vanilla extract
- 1 egg
- 1 teaspoon lime juice
- 1/2 teaspoon lime zest
- 1 1/2 cups unbleached flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon baking soda
- 1.5 cups powdered sugar
- 6 teaspoons lime juice (extra if needed)
- 1/2 teaspoon lime zest (plus extra for garnishing – optional)
- 1/2 teaspoon vanilla
Instructions
- Preheat the oven to 350°F (180°C).
- Cream together the softened butter and sugar until light and fluffy.
- Add in the vanilla extract, egg, lime juice, and lime zest, mixing until well combined.
- Gradually stir in the flour, baking powder, salt, and baking soda until a soft dough forms.
- Roll the dough into 1-inch balls and place them on parchment-lined baking sheets, giving them some space to spread.
- Bake for 9-10 minutes or until the edges are lightly golden brown.
- Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
- Make the glaze by combining powdered sugar, lime juice, lime zest, and vanilla. Add more lime juice if necessary to achieve desired consistency.
- Spoon about 1 teaspoon of glaze onto each cookie and spread it evenly or drizzle it on top. Garnish with extra lime zest if desired.
Notes
Store cookies in an airtight container at room temperature for up to a week. They freeze well when separated with parchment paper.
