Description

Delightful cookies that combine the tartness of lime with the sweetness of sugar, featuring a crackled top and tender texture.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 cup powdered sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl until well combined.
  3. Cream the softened butter and granulated sugar together in a separate bowl until light and fluffy.
  4. Mix in the egg, lime juice, and lime zest until well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Chill the dough in the refrigerator for about 15 minutes.
  7. Scoop portions of dough and roll them into balls, then roll each ball in powdered sugar.
  8. Place the dough balls on a lined baking sheet, leaving about 2 inches of space between each one.
  9. Bake for 10-12 minutes, until the edges are set and the tops appear crackled.
  10. Cool the cookies on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
