- 1 teaspoon lime zest
- 1/2 cup powdered sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl until well combined.
- Cream the softened butter and granulated sugar together in a separate bowl until light and fluffy.
- Mix in the egg, lime juice, and lime zest until well incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Chill the dough in the refrigerator for about 15 minutes.
- Scoop portions of dough and roll them into balls, then roll each ball in powdered sugar.
- Place the dough balls on a lined baking sheet, leaving about 2 inches of space between each one.
- Bake for 10-12 minutes, until the edges are set and the tops appear crackled.
- Cool the cookies on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them properly.
