- 2 boneless, skinless chicken breasts
- 2 stalks of lemongrass, finely chopped
- 3 cloves of garlic, minced
- 1 tablespoon of fish sauce
- 1 tablespoon of soy sauce
- 1 tablespoon of brown sugar
- 1 tablespoon of vegetable oil
- Salt and pepper, to taste
- Chopped cilantro, for garnish
Instructions
- Mix together the chopped lemongrass, minced garlic, fish sauce, soy sauce, brown sugar, vegetable oil, salt, and pepper to create the marinade.
- Add the chicken breasts, ensuring they are thoroughly coated. Cover and let them marinate in the fridge for at least 30 minutes.
- Preheat your grill or skillet over medium-high heat.
- Grill the chicken for approximately 6-7 minutes on each side, or until it’s fully cooked with lovely grill marks.
- Once cooked, remove from the heat and allow the chicken to rest for a few minutes before slicing.
- Serve with a garnish of freshly chopped cilantro.
Notes
For a vegetarian version, substitute fish sauce with soy sauce and brown sugar with honey for different sweetness.
