Description

Ingredients

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons poppy seeds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the flour, baking soda, and salt in a bowl until well combined.
  3. Cream the softened butter with the sugar and brown sugar until light and fluffy.
  4. Beat in the egg along with the lemon juice and lemon zest, mixing until fully incorporated.
  5. Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  6. Fold in the poppy seeds until evenly distributed throughout the dough.
  7. Drop cookie dough onto a parchment-lined baking sheet, leaving space between each scoop.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Best enjoyed with tea or a glass of lemonade. Can be topped with a light glaze made from powdered sugar and lemon juice.
