Instructions

- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
- In a larger bowl, cream the softened butter and sugar together until light and fluffy—this should take about 3 minutes.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Mix in the sour cream, lemon juice, and lemon zest, blending well.
- Gradually add your dry ingredients to the wet mixture until just combined—be careful not to overmix!
- Gently fold in the poppy seeds with a spatula.
- Pour the batter into your prepared loaf pan, smoothing the top with the spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Once done, allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
