Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  3. In a larger bowl, cream the softened butter and sugar together until light and fluffy—this should take about 3 minutes.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. Mix in the sour cream, lemon juice, and lemon zest, blending well.
  6. Gradually add your dry ingredients to the wet mixture until just combined—be careful not to overmix!
  7. Gently fold in the poppy seeds with a spatula.
  8. Pour the batter into your prepared loaf pan, smoothing the top with the spatula.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Once done, allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
