- 1/2 cup lemon curd
- Extra powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and powdered sugar until light and fluffy, about 3-4 minutes.
- Add in the vanilla extract and mix until well combined.
- Incorporate the flour and salt gradually, mixing just until combined.
- Form the dough into small balls, about 1 inch in diameter, and place them on a lined baking sheet.
- Create an indentation in the center of each ball using your thumb.
- Fill each indentation with a teaspoon of lemon curd.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack. Dust with extra powdered sugar if desired.
