Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup lemon curd
  • Extra powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until light and fluffy, about 3-4 minutes.
  3. Add in the vanilla extract and mix until well combined.
  4. Incorporate the flour and salt gradually, mixing just until combined.
  5. Form the dough into small balls, about 1 inch in diameter, and place them on a lined baking sheet.
  6. Create an indentation in the center of each ball using your thumb.
  7. Fill each indentation with a teaspoon of lemon curd.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack. Dust with extra powdered sugar if desired.
