Description

A refreshing and creamy pudding made with chia seeds, lemon juice, and maple syrup, perfect for breakfast or a light dessert.


Ingredients

  • 2 cups Almond Milk or Coconut Milk
  • 1/4 cup Maple Syrup or Honey
  • 1 unit Lemon Zest
  • 1 unit Lemon Juice
  • 1 teaspoon Vanilla Extract (Optional)
  • 1/2 cup Greek Yogurt or Coconut Cream (Optional)
  • 1 cup Fresh Berries
  • 1/2 cup Granola
  • 1/4 cup Nuts

Instructions

  1. Combine the chia seeds, almond milk (or your chosen milk), maple syrup (or honey), lemon zest, lemon juice, and vanilla extract if using in a mixing bowl. Stir well to ensure the chia seeds are evenly distributed.
  2. Allow the mixture to sit for about 5-10 minutes, then stir again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 120 minutes or overnight.
  4. Once set, if you’re adding Greek yogurt or coconut cream, gently fold that into the pudding until smooth.
  5. Serve topped with fresh berries, a sprinkle of granola, and your choice of nuts for an added crunch.

Notes

For creamier texture, blend after setting. Adjust sweetness to taste. Store in an airtight container for 3-5 days.
