- 2 cups Almond Milk or Coconut Milk
- 1/4 cup Maple Syrup or Honey
- 1 unit Lemon Zest
- 1 unit Lemon Juice
- 1 teaspoon Vanilla Extract (Optional)
- 1/2 cup Greek Yogurt or Coconut Cream (Optional)
- 1 cup Fresh Berries
- 1/2 cup Granola
- 1/4 cup Nuts
Instructions
- Combine the chia seeds, almond milk (or your chosen milk), maple syrup (or honey), lemon zest, lemon juice, and vanilla extract if using in a mixing bowl. Stir well to ensure the chia seeds are evenly distributed.
- Allow the mixture to sit for about 5-10 minutes, then stir again to prevent clumping.
- Cover the bowl and refrigerate for at least 120 minutes or overnight.
- Once set, if you’re adding Greek yogurt or coconut cream, gently fold that into the pudding until smooth.
- Serve topped with fresh berries, a sprinkle of granola, and your choice of nuts for an added crunch.
Notes
For creamier texture, blend after setting. Adjust sweetness to taste. Store in an airtight container for 3-5 days.
