- 1 ½ pounds chicken breast
- 2 tbsp butter
- 2–3 garlic cloves (minced)
- 2 tbsp all-purpose flour
- 1 cup chicken stock
- 3 tbsp fresh lemon juice
- 1 ½ tsp lemon zest
- 3 tbsp chopped fresh basil
- Salt and black pepper to taste
Instructions
- Start by flattening the chicken with a mallet for even cooking.
- Season the chicken with salt and black pepper and set it aside.
- Melt 1 tablespoon of butter in a skillet over medium heat.
- Add the chicken and cook until it’s lightly browned, about 4-5 minutes per side.
- Once browned, remove the chicken from the skillet and set it aside.
- In the same skillet, melt the remaining butter.
- Add the minced garlic and sauté for about 30 seconds to release its fragrance.
- Whisk in the flour until it’s well combined with the butter and garlic.
- Gradually pour in the chicken stock and lemon juice while constantly stirring to avoid lumps.
- Stir in the lemon zest for that zingy kick.
- Return the chicken to the skillet and let it simmer, stirring frequently, until the sauce thickens.
- Finally, sprinkle chopped basil over the top, season to taste with salt and black pepper, and you’re ready to serve!
Notes
For a creamier sauce, stir in a tablespoon of heavy cream at the end. Consider adding red pepper flakes for heat or substituting chicken with shrimp or tofu for variety.
