Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp dried culinary lavender
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Add the honey, eggs, and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mix just until combined.
  6. Fold in the dried culinary lavender gently for even distribution.
  7. Fill each cupcake liner about 2/3 full with batter and bake for 18-20 minutes.
  8. Cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

For added sweetness, dust them with powdered sugar or drizzle with honey glaze. Store in an airtight container for up to 4 days or freeze for up to 2 months.
