Description

A vibrant and delicious Persian herb frittata filled with fresh greens and a hint of sweetness, perfect for any occasion.


Ingredients

  • 1 cup fresh cilantro, finely chopped
  • 1 cup fresh parsley, finely chopped
  • 1/2 cup raisins
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp turmeric
  • 3 large eggs
  • 1/2 tsp baking powder

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Prepare the herbs: Wash the cilantro and parsley thoroughly. After drying, chop them finely and place them in a large mixing bowl.
  3. Combine ingredients: Add the raisins, olive oil, salt, pepper, turmeric, eggs, and baking powder to the bowl with the herbs. Mix until well combined.
  4. Transfer to skillet: Pour the mixture into a cast iron skillet or any oven-safe pan.
  5. Bake: Place the skillet in the oven and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and serve: Once baked, let your Kuku Sabzi cool slightly before slicing. Serve it warm or at room temperature.

Notes

This frittata is fantastic on its own or paired with yogurt or tzatziki. Serve as is or with crusty bread and salad.
