Instructions
- Grate the zucchini and sprinkle with salt. Let sit for about 10 minutes.
- Squeeze out the moisture using your hands or a clean kitchen towel.
- Mix the grated zucchini, all-purpose flour, cornstarch, green onions, egg, and black pepper in a bowl.
- Heat vegetable oil in a skillet over medium-high heat.
- Fry spoonfuls of the mixture, flattening slightly, for 3-4 minutes on each side until golden brown.
- Drain on paper towels to remove excess oil.
- Enjoy warm with soy sauce or your preferred dipping sauce.
Notes
Letting the zucchini rest with salt is key for crispy fritters. You can substitute all-purpose flour with gluten-free flour if needed.
