Description

Ingredients

  • 2 medium zucchini, grated
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 2 green onions, chopped
  • 1 egg
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying
  • Soy sauce or your favorite dipping sauce for serving

Instructions

  1. Grate the zucchini and sprinkle with salt. Let sit for about 10 minutes.
  2. Squeeze out the moisture using your hands or a clean kitchen towel.
  3. Mix the grated zucchini, all-purpose flour, cornstarch, green onions, egg, and black pepper in a bowl.
  4. Heat vegetable oil in a skillet over medium-high heat.
  5. Fry spoonfuls of the mixture, flattening slightly, for 3-4 minutes on each side until golden brown.
  6. Drain on paper towels to remove excess oil.
  7. Enjoy warm with soy sauce or your preferred dipping sauce.

Notes

Letting the zucchini rest with salt is key for crispy fritters. You can substitute all-purpose flour with gluten-free flour if needed.
