Description

A moist and flavorful cake infused with refreshing Key lime for a tropical treat perfect for warm days.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup Key lime juice
  • Zest of 1 Key lime
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons Key lime juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan to prevent sticking.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy in a separate large bowl.
  4. Add the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract, Key lime juice, and zest.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined; be careful not to overmix.
  6. Pour the batter into the prepared loaf pan and smooth out the top.
  7. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Mix the powdered sugar and Key lime juice in a bowl while the cake bakes to create a smooth glaze.
  9. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.
  10. Drizzle the glaze over the warm cake while it’s still slightly warm. Allow to cool completely before slicing.
