- 1 cup granulated sugar
- 2 large eggs

- Zest of 1 Key lime

Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a loaf pan to prevent sticking.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
- Cream the softened butter and granulated sugar until light and fluffy in a separate large bowl.
- Add the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract, Key lime juice, and zest.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined; be careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth out the top.
- Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Mix the powdered sugar and Key lime juice in a bowl while the cake bakes to create a smooth glaze.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.
- Drizzle the glaze over the warm cake while it’s still slightly warm. Allow to cool completely before slicing.
Notes
For a twist, try using regular limes or adding different citrus zests. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months.
