A refreshing and creamy yogurt bark that combines the tartness of key lime pie with a nutritious boost of protein and healthy fats, perfect for any occasion.


Ingredients

  • 2.5 cups Greek yogurt (plain, non-fat or low-fat)
  • 3.5 tbsp key lime juice (freshly squeezed)
  • 2 tbsp powdered swerve (or 1 tbsp honey)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest
  • 1/3 cup crushed gluten-free graham crackers
  • 1/4 cup toasted coconut (unsweetened)
  • 1 scoop vanilla protein powder

Instructions

  1. Mix the Greek yogurt, key lime juice, protein powder, vanilla extract, lime zest, and powdered swerve in a mixing bowl until smooth.
  2. Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
  3. Spread the yogurt mixture onto the prepared sheet evenly in a thin layer.
  4. Add the crushed graham crackers, toasted coconut, and more lime zest on top.
  5. Freeze the baking sheet for at least 120-180 minutes or until solid.
  6. Break the frozen yogurt bark into pieces.
  7. Serve immediately or store in an airtight container in the freezer for up to two weeks.
