Description

Ingredients

  • 1 cup almond flour
  • 1 3/4 cup powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon lime zest
  • Green food coloring (optional)
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar (for filling)
  • Juice of 2 key limes

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Sift together almond flour and powdered sugar in a large bowl to ensure there are no lumps.
  3. Whip the egg whites until they become foamy. Gradually add the granulated sugar and cream of tartar while you continue to beat until stiff peaks form.
  4. Fold the sifted almond flour and powdered sugar mixture into the meringue, adding vanilla extract, lime zest, and food coloring if desired.
  5. Pipe small circles of the mixture onto the lined baking sheet, giving them enough space to spread.
  6. Allow the macarons to sit for 30-60 minutes until they develop a skin.
  7. Bake for 15-20 minutes, then let them cool completely before handling.
  8. Prepare the filling by beating together softened butter and powdered sugar until smooth. Add lime juice and mix until combined.
  9. Pipe the filling onto half of the macaron shells and sandwich them with the other half.
