Description

Tender and caramelized roasted sweet potato cubes, perfect as a side dish for any meal.


Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • 1 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. Toss the sweet potato cubes with olive oil, salt, pepper, and optional spices in a large bowl.
  4. Spread the cubed sweet potatoes on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway through, until tender and golden brown.
