- 2 large sweet potatoes

- 1 teaspoon paprika (optional)
- 1 teaspoon garlic powder (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and cube the sweet potatoes into bite-sized pieces.
- Toss the sweet potato cubes with olive oil, salt, pepper, and optional spices in a large bowl.
- Spread the cubed sweet potatoes on a baking sheet in a single layer.
- Roast for 25-30 minutes, stirring halfway through, until tender and golden brown.
- Serve hot and enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
