- 2 Chicken breasts
- 2 tablespoons Jerk seasoning
- 1 cup White rice
- 1 cup Fresh pineapple, diced
- 1/2 Red onion, diced
- 1/4 cup Cilantro, chopped
- 2 tablespoons Lime juice
- 1/2 teaspoon Salt
- 1/2 teaspoon Black pepper
Instructions
- Marinate the chicken breasts in the jerk seasoning for at least 30 minutes.
- Cook the rice according to the package instructions and set aside.
- Grill or sauté the marinated chicken over medium heat until fully cooked, about 6-7 minutes per side.
- Combine chopped pineapple, diced red onion, chopped cilantro, lime juice, salt, and pepper in a bowl to make the salsa.
- Assemble the bowls by placing grilled jerk chicken over rice and topping with pineapple salsa.
Notes
For a healthy twist, consider using brown rice or quinoa instead of white rice. Leftovers can be stored in separate airtight containers.
