Description

A vibrant and satisfying bowl of Jerk Chicken topped with refreshing pineapple salsa, perfect for any occasion.


Ingredients

  • 2 Chicken breasts
  • 2 tablespoons Jerk seasoning
  • 1 cup White rice
  • 1 cup Fresh pineapple, diced
  • 1/2 Red onion, diced
  • 1/4 cup Cilantro, chopped
  • 2 tablespoons Lime juice
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

  1. Marinate the chicken breasts in the jerk seasoning for at least 30 minutes.
  2. Cook the rice according to the package instructions and set aside.
  3. Grill or sauté the marinated chicken over medium heat until fully cooked, about 6-7 minutes per side.
  4. Combine chopped pineapple, diced red onion, chopped cilantro, lime juice, salt, and pepper in a bowl to make the salsa.
  5. Assemble the bowls by placing grilled jerk chicken over rice and topping with pineapple salsa.

Notes

For a healthy twist, consider using brown rice or quinoa instead of white rice. Leftovers can be stored in separate airtight containers.
