Instructions
- Combine the ground beef, ground sausage, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper in a bowl.
- Shape the mixture into small meatballs.
- Bring the chicken broth to a boil in a large pot over medium heat.
- Gently place the meatballs into the pot and simmer until cooked through—about 10-15 minutes.
- Stir in the small pasta and cook according to package instructions until al dente.
- Add the spinach or kale and any optional carrots and celery, cooking until the greens are wilted.
- Serve hot, optionally garnished with additional Parmesan cheese and a drizzle of olive oil.
Notes
For added flavor, sauté garlic and onion in olive oil before adding the broth. Experiment with fresh herbs or a pinch of red pepper flakes for a kick.
