Ingredients

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 1 cup small pasta (like acini di pepe or orzo)
  • 2 cups spinach or kale
  • Optional: diced carrots and celery

Instructions

  1. Combine the ground beef, ground sausage, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper in a bowl.
  2. Shape the mixture into small meatballs.
  3. Bring the chicken broth to a boil in a large pot over medium heat.
  4. Gently place the meatballs into the pot and simmer until cooked through—about 10-15 minutes.
  5. Stir in the small pasta and cook according to package instructions until al dente.
  6. Add the spinach or kale and any optional carrots and celery, cooking until the greens are wilted.
