Description
A delightful twist on a classic sandwich featuring layers of turkey, prosciutto, fresh mozzarella, and vibrant flavors, nestled between soft focaccia.
Ingredients
Scale
- 1 loaf focaccia bread (halved horizontally)
- 2 Tbsp pesto (store-bought or homemade)
- 2 Tbsp mayonnaise
- 1 Tbsp sun-dried tomatoes
- 0.5 lb sliced deli turkey
- 6 oz prosciutto
- 0.5 cup roasted red peppers
- 8 oz sliced fresh mozzarella cheese
- 2 Tbsp balsamic glaze
- 1/3 cup fresh basil leaves
- 2 cups arugula
Instructions
- Start by laying each half of the focaccia bread on a cutting board, cut side up.
- In a small food processor, combine the mayonnaise and sun-dried tomatoes, pulsing until well-blended.
- Spread the tomato-mayo mixture on one half of the focaccia and the pesto on the other half.
- Next, layer on the turkey slices, followed by prosciutto, roasted red peppers, fresh mozzarella, basil leaves, and arugula.
- Sandwich the two halves of focaccia together and slice into quarters. Wrap it up for a picnic, or dig in right away. These sandwiches are best enjoyed fresh, ideally within a day of making.
Notes
For the best results, use high-quality focaccia bread and consider lightly toasting the outside before assembling. Fresh mozzarella enhances flavor immensely.
