Description

A delightful twist on a classic sandwich featuring layers of turkey, prosciutto, fresh mozzarella, and vibrant flavors, nestled between soft focaccia.


Ingredients

  • 1 loaf focaccia bread (halved horizontally)
  • 2 Tbsp pesto (store-bought or homemade)
  • 2 Tbsp mayonnaise
  • 1 Tbsp sun-dried tomatoes
  • 0.5 lb sliced deli turkey
  • 6 oz prosciutto
  • 0.5 cup roasted red peppers
  • 8 oz sliced fresh mozzarella cheese
  • 2 Tbsp balsamic glaze
  • 1/3 cup fresh basil leaves
  • 2 cups arugula

Instructions

  1. Start by laying each half of the focaccia bread on a cutting board, cut side up.
  2. In a small food processor, combine the mayonnaise and sun-dried tomatoes, pulsing until well-blended.
  3. Spread the tomato-mayo mixture on one half of the focaccia and the pesto on the other half.
  4. Next, layer on the turkey slices, followed by prosciutto, roasted red peppers, fresh mozzarella, basil leaves, and arugula.
  5. Sandwich the two halves of focaccia together and slice into quarters. Wrap it up for a picnic, or dig in right away. These sandwiches are best enjoyed fresh, ideally within a day of making.

Notes

For the best results, use high-quality focaccia bread and consider lightly toasting the outside before assembling. Fresh mozzarella enhances flavor immensely.
