A comforting Italian classic filled with savory Italian sausage, creamy ricotta, and gooey mozzarella.
Ingredients

- 2.5 tsp olive oil
- 1 lb Italian sausage
- 1/2 cup onion, diced
- 2.5 tsp garlic, minced
- 16 oz ricotta
- 1 egg
- 1.25 cups mozzarella cheese, shredded
- 0.75 cup parmesan cheese, grated
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
- 2.75 cups marinara sauce
- 12 manicotti shells
- Cooking spray
- 1.75 cups mozzarella, shredded (for topping)
- 3 tbsp parsley for garnish
Instructions
- Preheat the oven to 350°F and grease a 9×13 inch baking dish with cooking spray.
- Cook the Italian sausage in a skillet with olive oil over medium-high heat for 3-4 minutes until no pink remains.
- Add the diced onion and cook for 4-5 minutes, then add garlic for the last 30 seconds.
- Mix the ricotta, egg, 1.25 cups mozzarella, parmesan, Italian seasoning, red pepper flakes, salt, and pepper in a bowl.
- Fold in the cooled sausage mixture until combined.
- Boil salted water and cook manicotti shells for 1-2 minutes less than package instructions until al dente.
- Assemble the dish with marinara sauce at the bottom, fill manicotti shells with the cheese mixture, and lay in the dish.
- Cover with foil and bake for 20 minutes, then add 1.75 cups mozzarella on top and bake uncovered for an additional 10-15 minutes.
- Rest for 5 minutes, garnish with parsley, and serve hot.
Notes
Feel free to adjust ingredients based on personal preferences. The dish can also be made vegetarian by skipping the sausage and adding more vegetables.
