Description

A delightful almond cake infused with honey and warm spices that resembles the beloved flavors of baklava.


Ingredients

  • 2 cups Almond Flour
  • 1 cup Honey
  • 3 large Eggs
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Cardamom
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1/2 cup Olive Oil
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Water
  • 2 tablespoons Lemon Juice
  • 1/2 teaspoon Additional Ground Cinnamon (optional)
  • 1/2 cup Chopped Pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pan.
  2. Combine the almond flour, baking soda, salt, cinnamon, and cardamom in a large mixing bowl.
  3. Whisk together the honey, eggs, olive oil, and vanilla extract in another bowl until well blended.
  4. Gradually add the wet ingredients to the dry mixture, stirring until just combined.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Bring the water, honey, lemon juice, and optional ground cinnamon to a boil in a small saucepan to prepare the syrup. Reduce heat and let simmer for about 10 minutes, then remove from heat.
  8. Remove the cake from the oven and drizzle the warm syrup over the top immediately. Let it soak in as the cake cools.
  9. Garnish with chopped pistachios before serving.

Notes

Store leftovers in an airtight container at room temperature for up to three days, or freeze individual slices wrapped tightly.
