- 1 cup All-Purpose Flour
- 1/2 cup Cocoa Powder
- 1 tbsp Baking Powder
- 3/4 cup Granulated Sugar
- 2 large Eggs
- 1/2 cup Milk
- 1/3 cup Vegetable Oil
- 1 cup Espresso
- 1 cup Mascarpone Cheese
- 2 tbsp Cocoa Powder (to dust on top)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a cupcake tin with liners.
- Combine the dry ingredients: In a bowl, whisk together the flour, cocoa powder, baking powder, and sugar until well blended.
- Mix wet ingredients: In another bowl, beat together the eggs, milk, and vegetable oil until combined.
- Combine dry and wet mixtures: Slowly add the wet mixture into the dry ingredients, stirring gently until just combined.
- Fill the cupcake liners: Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake: Place them in the oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare mascarpone filling: While the cupcakes cool, mix the mascarpone cheese with 2 tablespoons of cocoa powder until smooth.
- Assemble: Once the cupcakes have cooled, use a serrated knife to cut a small hole in the center of each cupcake. Fill with the mascarpone mixture.
- Dust with cocoa: Finally, dust the tops of the cupcakes with a light layer of cocoa powder.
Notes
Serve with vanilla ice cream or whipped cream for an indulgent experience.
