Description

A deliciously rich chocolate cake layered with fresh strawberries, topped with a glossy chocolate shell, perfect for any celebration or casual treat.


Ingredients

  • 2 cups Granulated Sugar
  • 3/4 cup Unsweetened Cocoa Powder
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Buttermilk
  • 1/2 cup Vegetable Oil
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup Boiling Water
  • 2 cups Fresh Strawberries
  • 1 tablespoon Lemon Juice
  • 8 ounces Dark Chocolate
  • 2 tablespoons Coconut Oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Stir in the boiling water carefully until the batter is smooth and glossy.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean. Let cool completely.
  8. To make the chocolate shell, melt dark chocolate and coconut oil together until smooth.
  9. Drizzle the chocolate over the cooled cake and layer fresh strawberries on top, adding lemon juice for a zesty finish.

Notes

Store covered at room temperature if consumed within a couple of days or refrigerate for up to a week. The cake freezes well; wrap slices tightly for later enjoyment.
