- 1/2 cup raisins or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the dry ingredients: In a bowl, combine the rolled oats, flour, baking soda, salt, and cinnamon.
- Cream the wet ingredients: In a large bowl, beat together the softened butter, honey, brown sugar, and granulated sugar until light and fluffy.
- Add vanilla: Incorporate the vanilla extract into the butter mixture and mix until well combined.
- Combine mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If you’re using raisins or chocolate chips, fold them in at this point.
- Form the cookies: Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake: Place in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden.
- Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For chewier cookies, consider chilling the dough for 30 minutes before baking.
