- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 cup all-purpose flour
- 1/4 cup unsalted butter, cubed
- 1/4 cup chopped pecans (optional)
- 1/4 cup honey
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan with non-stick spray.
- Mix together the graham cracker crumbs and sugar in a medium bowl. Stir in the melted butter until the crumbs are well combined.
- Press the graham cracker mixture into the bottom of your prepared springform pan to form a solid crust, then bake for 10 minutes. Remove and set aside to cool.
- Beat the softened cream cheese with an electric mixer set to medium speed until it’s smooth and creamy.
- Add sugar and vanilla extract, continuing to beat until well combined.
- Incorporate the eggs one at a time, mixing well after each.
- Add in the sour cream and heavy cream, beating until completely smooth.
- Pour the cheesecake batter over the cooled crust and spread it evenly.
- Combine the brown sugar and cinnamon in a small bowl. Add flour, then the cubed butter, mixing until crumbly. Stir in chopped pecans if desired.
- Sprinkle the topping evenly over the cheesecake batter and drizzle with honey in a swirl pattern.
- Bake the cheesecake for 55 to 60 minutes until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool inside with the door slightly ajar for about an hour.
- Chill in the fridge for at least four hours, or ideally overnight, before slicing and serving.
Notes
For a lighter version, substitute heavy cream with evaporated milk. You can also skip the nuts if preferred.
