Description

A sweet and creamy cheesecake infused with the warm flavors of honey bun, perfect for any occasion.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, cubed
  • 1/4 cup chopped pecans (optional)
  • 1/4 cup honey

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan with non-stick spray.
  2. Mix together the graham cracker crumbs and sugar in a medium bowl. Stir in the melted butter until the crumbs are well combined.
  3. Press the graham cracker mixture into the bottom of your prepared springform pan to form a solid crust, then bake for 10 minutes. Remove and set aside to cool.
  4. Beat the softened cream cheese with an electric mixer set to medium speed until it’s smooth and creamy.
  5. Add sugar and vanilla extract, continuing to beat until well combined.
  6. Incorporate the eggs one at a time, mixing well after each.
  7. Add in the sour cream and heavy cream, beating until completely smooth.
  8. Pour the cheesecake batter over the cooled crust and spread it evenly.
  9. Combine the brown sugar and cinnamon in a small bowl. Add flour, then the cubed butter, mixing until crumbly. Stir in chopped pecans if desired.
  10. Sprinkle the topping evenly over the cheesecake batter and drizzle with honey in a swirl pattern.
  11. Bake the cheesecake for 55 to 60 minutes until the center is set but still slightly jiggly.
  12. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for about an hour.
  13. Chill in the fridge for at least four hours, or ideally overnight, before slicing and serving.

Notes

For a lighter version, substitute heavy cream with evaporated milk. You can also skip the nuts if preferred.
