Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar (plus extra for topping)
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk (as needed for texture)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, creamy peanut butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Add the egg and vanilla extract to your mixture, stirring until well combined.
  4. Whisk together flour, baking soda, and salt in a separate bowl. Gradually mix this dry combination into the wet ingredients until a dough forms.
  5. Roll the dough into small balls (about 1 inch), shape them into ovals, and use a fork to press a crosshatch pattern into the tops.
  6. Bake for 8–10 minutes until the cookies are lightly golden. Allow them to cool completely on the baking sheet.
  7. Beat together the creamy peanut butter and softened butter for the filling until smooth. Gradually add in the powdered sugar and vanilla extract until creamy, adding milk if needed for texture.
  8. Spread or pipe the filling onto the flat side of one cookie and top with another cookie to create a sandwich.
