- 1 teaspoon Ground cinnamon
- 1 large Egg
- 1/2 cup Milk
- 1 whole Fresh pineapple, sliced into rings
- 2 cups Vegetable oil
- 1 tablespoon Additional cinnamon and sugar
Instructions
- Prepare the pineapple: Start by slicing your fresh pineapple into rings.
- Mix dry ingredients: In a bowl, combine flour, sugar, baking powder, salt, and ground cinnamon.
- Mix wet ingredients: In another bowl, whisk the egg (or flax egg) and then stir in the milk until well combined.
- Combine mixtures: Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix!
- Heat oil: In a deep pan or skillet, heat the vegetable oil over medium-high heat. You can test if it’s ready by dropping a small amount of batter into the oil; it should sizzle.
- Dip and fry: Dip the pineapple rings into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying until golden brown (about 2-3 minutes per side). Repeat with remaining rings.
- Add cinnamon sugar: After frying, toss your fritters immediately in the cinnamon-sugar mixture for an extra layer of flavor.
Notes
For best results, ensure the oil is hot enough to avoid soggy fritters. Try substituting fresh pineapple with other fruits for different flavors.
