- 1 cup rolled oats
- 1/2 cup peanut butter
- 1/2 cup dark chocolate chips
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the ripe bananas until smooth in a large bowl.
- Add the peanut butter, honey (or maple syrup), and vanilla extract. Mix everything until well combined.
- Stir in the rolled oats, dark chocolate chips, baking soda, and salt until fully incorporated and the dough is thick.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them out as they will spread slightly.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
