Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/2 cup dark chocolate chips
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the ripe bananas until smooth in a large bowl.
  3. Add the peanut butter, honey (or maple syrup), and vanilla extract. Mix everything until well combined.
  4. Stir in the rolled oats, dark chocolate chips, baking soda, and salt until fully incorporated and the dough is thick.
  5. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them out as they will spread slightly.
  6. Bake for 10-12 minutes or until the edges are lightly golden.
  7. Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
