Description

Delightful Hawaiian Chicken Kebabs bring tropical flavors to your grill, perfect for gatherings and summer cookouts.


Ingredients

  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil, divided
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves, minced
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper to taste
  • 1 3/4 lb boneless, skinless chicken breast, chopped into 1 1/4-inch cubes
  • 3 cups fresh cubed pineapple
  • 1 1/2 large green peppers, diced into 1 1/4-inch pieces
  • 1 large red onion, diced into 1 1/4-inch pieces

Instructions

  1. Whisk together the ketchup, dark brown sugar, soy sauce, pineapple juice, 2 tablespoons of olive oil, rice vinegar, garlic, ginger, and sesame oil in a mixing bowl. Season with salt and pepper to your liking.
  2. Place the chopped chicken into a resealable bag or bowl and pour the marinade over the chicken. Seal or cover and refrigerate for at least 30 minutes.
  3. Thread the marinated chicken pieces, cubed pineapple, green pepper, and red onion onto skewers, alternating as you go.
  4. Preheat your grill and brush it with olive oil to prevent sticking.
  5. Grill the skewers over medium heat, occasionally basting with reserved marinade, until the chicken is cooked through and has a nice char, about 10-15 minutes.
  6. Serve warm and enjoy!

Notes

For maximum flavor, marinate the chicken overnight. You can add red pepper flakes for a kick or substitute chicken with tofu or shrimp for a different twist.
