Ingredients

- 1/3 cup ketchup
- 1/3 cup packed dark brown sugar
- 1/3 cup low-sodium soy sauce
- 1/4 cup canned pineapple juice
- 4 Tbsp olive oil, divided
- 1 1/2 Tbsp rice vinegar
- 4 garlic cloves, minced
- 1 Tbsp minced ginger
- 1/2 tsp sesame oil
- Salt and freshly ground black pepper to taste
- 1 3/4 lb boneless, skinless chicken breast, chopped into 1 1/4-inch cubes
- 3 cups fresh cubed pineapple
- 1 1/2 large green peppers, diced into 1 1/4-inch pieces
- 1 large red onion, diced into 1 1/4-inch pieces
Instructions
- Whisk together the ketchup, dark brown sugar, soy sauce, pineapple juice, 2 tablespoons of olive oil, rice vinegar, garlic, ginger, and sesame oil in a mixing bowl. Season with salt and pepper to your liking.
- Place the chopped chicken into a resealable bag or bowl and pour the marinade over the chicken. Seal or cover and refrigerate for at least 30 minutes.
- Thread the marinated chicken pieces, cubed pineapple, green pepper, and red onion onto skewers, alternating as you go.
- Preheat your grill and brush it with olive oil to prevent sticking.
- Grill the skewers over medium heat, occasionally basting with reserved marinade, until the chicken is cooked through and has a nice char, about 10-15 minutes.
- Serve warm and enjoy!
Notes
For maximum flavor, marinate the chicken overnight. You can add red pepper flakes for a kick or substitute chicken with tofu or shrimp for a different twist.
