- 8 ounces pasta (penne, fettuccine, etc.)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 cups Hatch chiles, roasted and chopped
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook the pasta according to package instructions. Once al dente, drain and set aside.
- Sauté the garlic in olive oil over medium heat until fragrant, about 1 minute.
- Add the roasted and chopped Hatch chiles, cooking for an additional 2-3 minutes until well combined.
- Create the sauce by pouring in heavy cream and letting it simmer gently. Stir in Parmesan cheese until melted and creamy.
- Season with salt and pepper according to preference.
- Combine the cooked pasta into the sauce, tossing until every strand is coated.
- Serve the pasta hot, garnished with fresh cilantro.
