Description

A flavorful and creamy pasta dish with roasted Hatch chiles, perfect for a comforting weeknight meal.


Ingredients

  • 8 ounces pasta (penne, fettuccine, etc.)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups Hatch chiles, roasted and chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the pasta according to package instructions. Once al dente, drain and set aside.
  2. Sauté the garlic in olive oil over medium heat until fragrant, about 1 minute.
  3. Add the roasted and chopped Hatch chiles, cooking for an additional 2-3 minutes until well combined.
  4. Create the sauce by pouring in heavy cream and letting it simmer gently. Stir in Parmesan cheese until melted and creamy.
  5. Season with salt and pepper according to preference.
  6. Combine the cooked pasta into the sauce, tossing until every strand is coated.
  7. Serve the pasta hot, garnished with fresh cilantro.
