Description

Delightful Hatch Chile Meatballs featuring beef and pork blended with the smoky sweetness of roasted Hatch chiles, perfect for appetizers or main courses.

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 large egg
  • 2 cups roasted Hatch chiles, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Combine ingredients in a large bowl, blending together ground beef, ground pork, breadcrumbs, Parmesan cheese, milk, egg, chopped Hatch chiles, garlic powder, onion powder, salt, and pepper until well mixed.
  2. Shape the mixture into meatballs about 1 inch in diameter.
  3. Heat olive oil in a skillet over medium heat until hot but not smoking.
  4. Cook the meatballs in the skillet for about 10 to 12 minutes, turning occasionally until browned and cooked through.
  5. Serve meatballs warm, as an appetizer or over pasta for a main dish.

Notes

Chill the meatball mixture before shaping for better consistency; use a cookie scoop for uniform meatballs.
