- 2 medium sweet potatoes
- 1 lb ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- Olive oil
- Fresh cilantro or parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake for 40-45 minutes until tender.
- Drizzle olive oil in a skillet over medium heat. Add diced onion and bell pepper; sauté until softened (about 5 minutes).
- Stir in minced garlic and cook for another minute.
- Add ground turkey, cumin, paprika, salt, and pepper. Cook until the turkey is browned and fully cooked, roughly 7-10 minutes.
- Cut the baked sweet potatoes in half lengthwise. Scoop out a little flesh to create a boat.
- Fill each sweet potato half with the turkey mixture.
- Garnish with fresh cilantro or parsley, then serve.
Notes
Feel free to modify the ingredients based on what you have on hand. Add black beans for a heartier option or top with avocado for extra flavor.
