Delicious Ground Turkey Stuffed Sweet Potatoes packed with protein and fiber, perfect for a healthy family dinner.


Ingredients

  • 2 medium sweet potatoes
  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Olive oil
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake for 40-45 minutes until tender.
  3. Drizzle olive oil in a skillet over medium heat. Add diced onion and bell pepper; sauté until softened (about 5 minutes).
  4. Stir in minced garlic and cook for another minute.
  5. Add ground turkey, cumin, paprika, salt, and pepper. Cook until the turkey is browned and fully cooked, roughly 7-10 minutes.
  6. Cut the baked sweet potatoes in half lengthwise. Scoop out a little flesh to create a boat.
  7. Fill each sweet potato half with the turkey mixture.
  8. Garnish with fresh cilantro or parsley, then serve.
