- 1 tablespoon olive oil
- 1 pound ground chicken
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium zucchini, diced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/4 cup chopped fresh parsley
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the ground chicken, breaking it up with a spoon and cooking until browned, about 5 to 7 minutes.
- Stir in the diced onion and minced garlic, cooking until the onion turns translucent, approximately 3 to 4 minutes.
- Toss in the diced zucchini and continue cooking for an additional 2 minutes.
- Add the rice, chicken broth, salt, black pepper, paprika, and cumin. Mix well.
- Bring the mixture to a boil; then reduce the heat to low. Cover the skillet and let it simmer for 15 to 20 minutes, or until the rice is cooked and has absorbed all the liquid.
- Remove the skillet from heat and allow it to sit covered for 5 minutes.
- Fluff the rice with a fork, sprinkle with chopped parsley, and serve warm.
Notes
Feel free to swap ground chicken with ground turkey or a plant-based protein for a vegetarian twist. Experiment with different spices for new flavor profiles.
