Description

A delightful one-pan meal filled with ground chicken, fresh zucchini, and fluffy rice, all simmered together with spices in under 30 minutes.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground chicken, breaking it up with a spoon and cooking until browned, about 5 to 7 minutes.
  3. Stir in the diced onion and minced garlic, cooking until the onion turns translucent, approximately 3 to 4 minutes.
  4. Toss in the diced zucchini and continue cooking for an additional 2 minutes.
  5. Add the rice, chicken broth, salt, black pepper, paprika, and cumin. Mix well.
  6. Bring the mixture to a boil; then reduce the heat to low. Cover the skillet and let it simmer for 15 to 20 minutes, or until the rice is cooked and has absorbed all the liquid.
  7. Remove the skillet from heat and allow it to sit covered for 5 minutes.
  8. Fluff the rice with a fork, sprinkle with chopped parsley, and serve warm.

Notes

Feel free to swap ground chicken with ground turkey or a plant-based protein for a vegetarian twist. Experiment with different spices for new flavor profiles.
